Ghee Baked Blueberry Oats

Ingredients

  • 1 ½ cups rolled oats

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground clove

  • 1/4 tsp nutmeg 

  • ½ tsp baking powder

  • Pinch of sea salt

  • 1 ½ cups almond milk (or milk of choice)

  • 1 ripe banana, mashed

  • 1 egg (or flax egg: 1 tbsp flax + 2.5 tbsp water)

  • 1/4 cup maple syrup (or honey)

  • 2 tbsp ghee

  • 1 tsp vanilla extract

  • ¼ cup chopped walnuts 

  • 1/2 cup frozen or fresh berries 

Directions

1. Preheat oven to 180°C / 350°F and grease a small baking dish with ghee.

2. In a bowl, combine the oats, cinnamon, baking powder, and salt.

3. In another bowl, whisk the banana, almond milk, egg, maple syrup, melted ghee, and vanilla.

4. Pour wet ingredients into the dry and stir to combine. Fold in any add-ins like nuts or berries.

5. Pour mixture into your baking dish and smooth the top.

6. Bake for 30–35 minutes, or until set and lightly golden.

7. Cool slightly before serving. Delicious warm with a dollop of yogurt, nut butter, or more ghee drizzled on top!
